A Tequila Made With Whisky Expertise
Dama Fortuna, a new tequila made by a scotch whisky expert, has just hit the market.Spanish for “Lady Luck,” Dama Fortuna Blanco Tequila is crafted from 100% Blue Weber Agave using traditional production methods and is 80 proof. It is crafted at Casa Loy (NOM 1633), located in the hills of Ayotlán in the Los Altos region of Jalisco, and is made from fully mature agave cultivated at a single 15,000-acre estate situated between 4,500 and 6,000 feet above sea level. The agave is cooked in brick ovens and extracted using an expeller screw machine process. It is then fermented without fibers in open-air, stainless-steel tanks for 72 hours before double-distillation in stainless steel, copper coil-lined stills.Dama Fortuna is the latest product from Its Founder, Euan Shand, who grew up in the scotch whisky world. He began his career as a cooper and warehouseman at GlenDronach, and later helmed independent bottler Duncan Taylor, Ltd. Glen Scotia Returns To Its 10
Glen Scotia is reintroducing its 10-Year-Old expression to the world of whisky.The expression is said to be "an authentic representation" of Campbeltown, the smallest of Scotland’s five designated whisky regions. Made with 100% malted barley sourced from the east coast of Scotland and water sourced from Crosshill Loch, the whisky is distilled on a swan neck, copper pot still, barreled in first fill ex-bourbon barrels, and aged in both dunnage and palletized warehouses that are maritime-adjacent along the Firth of Clyde on the Kintyre Peninsula.The traditional choice for aging spirits in Campbeltown was bourbon casks. Lost Lantern has announced its Summer 2025 Collection, celebrating the rise of estate distilleries.Estate distilleries are those that make whiskey using grain grown entirely on their own land. While estate wineries have long been celebrated, estate distilleries were almost unheard of until recently. Out of more than 3,000 distilleries in the US, only a handful grow their own grain. Inspired by the "Golden Ratio," the whisky comprises 61.8% 2nd fill European Sherry Oak Butt and 38.2% 3rd Fill American Oak Hogshead, the two components then coming together to age for 15 months. Hawk's Rock Takes Flight With Garavogue
Hawk’s Rock Distillery, Sazerac's recently acquired Irish whiskey distillery, has just announced its inaugural release, Garavogue 20 Year Old Single Malt Irish Whiskey.Crafted by Master Blender Helen Mulholland, the first female Master Blender in Irish Whiskey history, the expression is named after the river that flows past the distillery through Sligo town into the Atlantic Ocean. Double-distilled and initially aged for a minimum of 14 years in ex-bourbon American oak casks, the whiskey was then transferred into a variety of finishing casks including French Muscat, French Sauternes, Spanish Pedro Ximénez Sherry and Barbadian Rum casks for further maturation. The result is a 94 proof whiskey that embodies Sazerac’s dedication to world class distillation, aging and blending.“The current trend is for whiskey to have a rich sherry finish, but Garavogue is purposefully different,” says Hawk’s Rock Distillery Master Blender Helen Mulholland. “We believe that complexity and subtlety can work hand in hand. Milam & Greene Has "The Answer"
Milam & Greene Whiskey has introduced “The Answer” Straight Bourbon, the first whiskey in the United States to isolate and identify the difference in the impact of climate on whiskey flavor and proof between Kentucky and Texas.For more than five years, the brand aged whiskey from the exact same distillation in Kentucky and in the Texas Hill Country. The result is a side-by-side bourbon bottle set. It invites consumers to explore the distinct "science in a glass" of each bourbon and then to try their hand at blending, a technique central to Milam & Greene's whiskeys.“The Answer” is the culmination of the first empirical study in the United States comparing bourbon aging in Kentucky vs. Texas to better understand how climate impacts flavor and proof. To isolate the effect of local climate on bourbon aging, the team distilled a batch of bourbon in Bardstown, Kentucky, in October 2019 using its proprietary yeast strain and a mash bill of 70% corn, 8% malted barley, and 22% malted rye. Half of the batch stayed and aged in Bardstown, while the other half was immediately shipped to Blanco, Texas, to age in the rickhouse at the Milam & Greene distillery. All the bourbon rested in 53-gallon barrels.“We wanted to better understand how temperature fluctuation between the two environments influences flavor extraction in our whiskey, so one of the first activities we did together as a team was lay down these barrels in two states in 2019,” said Heather Greene, CEO and Master Blender at Milam & Greene. “The popular hypothesis that the hotter, drier climate significantly differentiates Texas bourbon across the board with higher oak extraction compared to a Kentucky bourbon is a good one, and now you can taste it. I encourage other distilleries in Texas to iterate on our findings, though, and I suspect many will come up with similar results. This is exciting.”Bardstown has colder winters with an average temperature of 40°F in January, warm summers with an average temperature of 86.5°F in July, and higher humidity ranging from 65 to 85%. Higher humidity promotes slower evaporation at 2-4%, creating a final proof of 108 in the Kentucky-aged sample.The climate in Blanco is warmer with milder winters, averaging a temperature of 60°F in January, record hot summers during the experiment, averaging a temperature of 93.7°F in July, and lower humidity ranging from 50–60%. The rapid and dramatic temperature changes that happen within just a month in Blanco are also worth noting, compared with Kentucky. The evaporation rate in Blanco was often greater than 10% per year, producing a natural final proof of 116.Milam & Greene conducted interim sensory analyses, and then a final sensory and chemical analysis after five years to measure differences in 10 compounds that correlate with sensory elements in the whiskey. There were differences in the ppm (parts per million) of all naturally occurring compounds measured, such as acetaldehyde, methanol, propanol, ethyl acetate, butanol, furfural, phenylethyl alcohol, and variants of methyl butanol and methyl propanol. Compounds that produce woodier characteristics on the palate showed a higher ppm in the Texas-aged Bourbon than the fruitier, flowery “estery” notes of the Kentucky-aged bourbon.“Individually, each bourbon is delicious, and batched together, the combined bourbons also create gorgeous, complex whiskey,” says Greene. “This experiment puts a spotlight on everything we do at Milam & Greene as we bring together the best casks aged in different states, or as in our sell-out Wildlife Collection, bringing whiskey down to Blanco to age for extra flavor extraction. We understand how to get the best characteristics of whiskey from each state to shine through in a blend. Our team emphasizes that while the chemical analysis of the whiskey is exciting, nothing compares to the human experience of nosing and tasting.”This study opens the door for further research using advanced techniques. Ardbeg Goes Extraterrestrial For Smokiverse
Ardbeg celebrates Fèis Ìle (Islay's Festival of Music and Malt) and Ardbeg Day with the release of its Smokiverse. This limited edition will be the distillery’s first whisky crafted from a high-gravity mash.Ardbeg’s Whisky Creation Team began experimenting some years ago with the mashing process, in which malted barley is converted into fermentable sugars. One of their experiments involved reducing the amount of water used in the packed mash tun.
